Our cellar holds 24,000 bottles, representing our list of 1,400 different wines from the world over. Although it consists mainly of wines from France and the United States, it also includes several of the best New World wines and the grand classics of Italy.

Renowned for its impeccable service, Nuances uses glasses from the Riedel collection exclusively, thereby enabling the full bouquet and true richness of each of our cellars’ vintages to emerge. The temperature and humidity levels in our cellars are carefully controlled so as to best preserve our wines. All of Nuance’s waiters are professional sommeliers certified by the Canadian Association of Professional Sommeliers.

In close collaboration with the kitchen team, our team of sommeliers can pair the three - and five - course sampling menus with a palette of wines by the glass.
